New Restaurant Opening CTs teach and deliver our quality and service standards to new staff in our beautiful new locations. Training occurs primarily in side-by-side or classroom scenarios, setting up new equipment, and ensuring all staff are set up for success, quizzed, and certified. NRO CTs are critical to a successful new restaurant opening, so we're looking for great CTs like you!

  • 6 months as a certified CT preferred.
  • Must be in good standing with your home restaurant.
  • Must display a positive attitude and role model North Italia standards EVERY shift.
  • Complete an NRO Interest Form online and be approved by your GM.

NRO CTs are responsible for many aspects of an opening, including setting up the new restaurant, training staff, and being the subject matter expert and standard-bearer for their position.

CTs will be at an opening typically between 10 to 21 days depending on their position.

CTs will typically work 12 hours a day/6 days per week. This is subject to change based on the needs of the restaurant. Breaks will be scheduled every day and CTs are required to take assigned breaks.

CTs are paid an NRO hourly rate based on their home restaurant hourly rate for non-tipped staff members or a pre-determined standard rate for tipped staff members.

We welcome all interested CTs and will take second jobs into consideration when calculating a CT's NRO rate of pay. Please contact your NRO Manager for further details.

CTs attending an opening receive a non-taxable daily per diem for each day they are away from home.

North Italia reserves the right to determine the best mode of travel for each CT based on the location of the new restaurant. Some options include:
  • Fly – Depending on the distance, a CT may opt to fly to an opening.
  • Drive (locally) – If the CT resides in the same town/state as the NRO, the CT will drive their own car (when applicable). If their home restaurant is over 45 miles/45 minutes away, they are eligible to stay in DT housing.
  • Drive (out of town/state) – If a CT lives in a different city and wishes to drive their own vehicle to the NRO, they will be reimbursed for mileage (round trip only) up to the cost of a plane ticket.
  • Carpool – If there are two or more CTs traveling on the same dates to the NRO, they may carpool. Only the owner of the car receives mileage reimbursement.

CTs are provided shared occupancy (two CTs per room) hotel rooms in the vicinity of the restaurant.

NRO teams are built based on proximity to the restaurant location and training needs. CTs may request a specific NRO through their NRO manager, but we are not able to make any guarantees.

Yes! We are always looking for qualified transfers to each NRO. Interested staff members should contact their general manager and regional manager for more information on the transfer process.

If the CT drives their own vehicle, they are responsible for getting themselves to/from scheduled work shifts. Additional options include:
  • Uber/Lyft – North Italia may deem ridesharing options like Uber or Lyft appropriate means of travel for an opening. CTs will book their own transportation through a mobile app and will be reimbursed for the expenses in their per diem.

It is strongly recommended CTs bring a minimum of 5 sets of attire based on their position, plus casual clothes for days off are recommended. Attire must be in good condition to uphold the North Italia standard. Check local weather before departure for any additional needs.

CTs will be provided with a variety of family meal style lunches by the BOH CT team every day. All diets and restrictions will be provided for.
